Here is our offering for candied ginger. We take fresh baby ginger and turmeric  and galangal (Thai ginger) roots, cook them in organic sugar, organic lemon juice and og black pepper, and then lovingly and laboriously bake each small batch to bring you this tasty chewy treat.
